Mud crab season has begun, bringing with it one of the most prized seafood offerings of the year. This January, Spice Temple is serving premium live mud crabs sourced from Queensland’s pristine northern coastline, where clean tidal estuaries produce crabs renowned for their sweet, pure flavour and firm, succulent flesh. Each crab is prepared to order and served at a minimum of 1kg, ensuring exceptional freshness and to showcase the natural quality of the crab itself.
Guests can choose from five traditional sauces—Four Chillies; Salted Olive and Black Bean Dressing; Black Bean and Salted Chilli; Ginger and Shallot; or XO Sauce. Each reflects the bold, layered flavours of regional Chinese cuisine and is crafted to enhance the crab’s sweetness and richness without overwhelming it.
Alongside our mud crab selection, our live tanks are replenished regularly with lobsters, pipis and other seasonal seafood, all cooked to order.

Welcome the Year of the Horse with a limited-time Lunar New Year Banquet at Spice Temple, available from February 9 to March 3.
Sydney’s banquet honours the season with a vibrant Pink Snapper Yu Sheng, seafood dumplings and pipies for good fortune, and Coral Trout with long-life noodles for longevity, supported by celebratory dishes like pork belly with rice cake, premium beef, and seasonal greens.
Melbourne’s menu offers its own expression of the celebration — from refreshing beginnings to a bright ocean trout Yu Sheng, followed by greenlip abalone with Black Oscietra caviar, festive seafood, smoky longevity noodles, and Berkshire pork belly with soft gua bao.
As a final touch, every banquet guest will receive a red-packet gesture — a timeless symbol of luck, gratitude, and fresh beginnings.

Inspired by Chef Andy Evans’ recent travels to China, through Chengdu, Chongqing, Changsha, Kunming and Beijing, the Peony Banquet captures the depth and diversity of regional Chinese cuisine.
Eleven dishes across four courses highlight the flavours, techniques, and traditions discovered along the way, from delicate pickles and steamed eggplant with aged black vinegar and shallot oil, to twice-cooked pork belly, stir-fried river prawns, and almond cake with jasmine pearl syrup.
A celebration of culinary discovery from Chef Andy’s China tour, designed to share.
